Baba Ganouj
(Eggplant salad)

Eggplant, cilantro leaves, ginger root, garlic, lemon juice, dash
pepper, ground cumin; 2)tahini(sesame seed paste), pomegranate juice,olive oil,salt,(optional: pomegranate seeds).

Cilantro puree : Wash and dry cilantro leaves, add oil, salt and cumin and puree
in food processor.

Chop or
grate 1 tablespoon ginger root and 2 cloves garlic(6).

Char, broil or bake the
eggplant, discard skin drain and mash(7,8).

Combine eggplant, the cilantro puree, tahini, lemon juice,
ginger, garlic, salt, pepper
and mix well. (9).Add pomegranate juice (10).

Garnish with cilantro leaves, sliced tomato .(pomegranate
seeds)
Serve with pita bread or rustic
bread.
Optional: one fresh pomegranate seeded and juiced.
