Stir-Fried Pork with Corn

Boneless lean pork, onion, mushrooms, baby corn, garlic, green onions.

In a bowl combine cornstarch, soy sauce, sherry, black pepper.

Add pork strips and 1 tblsp. oil and marinate 15 minutes.

Thinly slice the mushrooms, mince the garlic and cut onion in wedges, cut green onions. Drain the baby corn and prepare the cooking sauce:

 cornstarch, sugar, vinegar, salt, soy sauce, water.

Heat a wok over high heat. Add 2 tblsp. oil. When oil is hot add garlic and stir once. Add pork and stir-fry 4 minutes. Set aside.

Heat 2 tblsp. oil and add onion wedges and sliced mushrooms to the pan. Stir-fry 1 minute.

To the browned mushrooms and onions in the pan add corn, pork, green onions and stir-fry 30 seconds; add cooking sauce and cook stirring another 2-3 minutes.

Serve with hot plain rice.
